Ingredients

  • 2 sticks celery, finely chopped
  • 2 medium carrots, peeled and finely chopped
  • 1/2 medium onion, chopped
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp flour
  • 6 cups chicken broth
  • 1/4 tsp Italian seasoning
  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tbsp lemon juice (adjust to taste)
  • 1 tbsp fresh parsley, chopped (or to taste)
  • Salt and pepper, to taste

Instructions 

  • In a large soup pot, sauté the chopped celery, carrots, and onions in butter and olive oil over medium-high heat for 5-7 minutes.
  • Add the minced garlic to the pot and cook for about 30 seconds. Stir in the flour and cook for an additional minute.
