These BBQ Chicken Stuffed Sweet Potatoes are an easy, healthy, and delicious meal. Packed with shredded BBQ chicken, red onion, and fresh cilantro, this dish is both satisfying and flavorful.
- 4 sweet potatoes
- 3 medium chicken breasts
- 2 tbsp avocado oil (or olive oil)
- ¾ cup chicken broth
- 8 oz BBQ sauce (or more, to taste)
- ½ cup sliced red onion
- ⅓ cup chopped cilantro
- Salt and pepper, to taste
Preheat your oven to 400°F (200°C).
Prepare the sweet potatoes: Wash them thoroughly and poke each one 5-6 times with a fork or knife. Place them on a lined baking sheet and bake for about 60 minutes, or until tender. Adjust the cooking time based on the size of the potatoes.
Cook the chicken: While the sweet potatoes bake, heat the avocado oil in a large sauté pan over medium heat. Season the chicken breasts with salt and pepper, and cook for about 5 minutes on one side. Flip the chicken, add the chicken broth, cover the pan, and cook for an additional 7-10 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Shred the chicken: Remove the chicken from the pan and shred using two forks or a stand mixer. Place the shredded chicken into a bowl and stir in the BBQ sauce, coating it evenly.
Assemble the stuffed sweet potatoes: Once the sweet potatoes are done, slice them in half lengthwise. Fill each with the BBQ chicken mixture, then top with sliced red onion and chopped cilantro.
