- 2 boneless, skinless chicken breasts (8 oz. each)
- 1¼ tsp kosher salt, divided
- 1 tsp black pepper, divided
- ½ cup all-purpose flour, plus 1 tsp for sauce
- 3 tbsp olive oil
- 4 tbsp unsalted butter
- 8 oz sliced cremini mushrooms
- 2 shallots, sliced (about 1/2 cup)
- ½ cup heavy whipping cream
- 2 tbsp chopped fresh flat-leaf parsley
- ½ tsp grated lemon zest, plus extra for garnish
