- ⅓ cup all-purpose flour
- ½ tsp dried oregano
- ½ tsp ground black pepper
- ½ tsp coarse salt
- 1 ½ lbs boneless, skinless chicken breasts (cut in half lengthwise)
- 3 tbsp olive oil, divided
- 2 garlic cloves, roughly chopped
- ½ pint grape tomatoes, halved
- 3 oz large black olives, pitted and halved
- ½ cup crumbled feta cheese
- Small handful of baby spinach, chopped
Prepare the Chicken:
