For the Chicken:
- 4 medium boneless, skinless chicken breasts
- 1–2 red bell peppers, diced
- 2 tbsp 2 tablespoons fresh chopped cilantro (for garnish)
For the Marinade:
- ¼ cup brown sugar
- 1 cup BBQ sauce
- 2 tsp smoked paprika
- 3 garlic cloves, finely chopped
- 1 tsp cayenne pepper (optional)
- 2 tsp dried oregano
Prepare the Marinade:In a small bowl, whisk together the BBQ sauce, brown sugar, smoked paprika, garlic, cayenne pepper (if using), and oregano. Season the Chicken:Cut the chicken breasts into bite-sized cubes and season lightly with salt and pepper. Marinate:Toss the chicken pieces in half of the prepared marinade, ensuring they are well coated. Cover and refrigerate for at least 20 minutes (or up to overnight for deeper flavor).
